Shutter Speed - Determined by Camera. Focus Mode - Single-Shot Autofocus. Metering Mode - Matrix. If you a photo ends up too dark with these settings, make the aperture wider (i.e., moving from f/8 to f/7.1) or raise the ISO (i.e., moving from ISO 400 to ISO 800).
Bump up your ISO as needed, to allow for faster shutter speeds. Likely you'll need 1/1000 or faster. I'll assume a middle f-stop, such as f8, so on a normally sunny day you'd need ISO 250 or so, to get 1/1000. Might want to go to ISO 500, 1/1600, f8, or even faster, though. Experiment and make some notes.
However, case settings 1 to 4 assume you are moving the camera to keep the focusing area immediately over the subject (panning). For times when you are not panning, Case 5 allows the camera to change the focusing points, following the subject within the frame. For this to happen, the focusing points need to be able to change.
